The initial update to the convert_encrypted_field script had some issues where it would fail to encrypt nested field attributes.
Since the field level encryption for complex data structures doesn't rely on a virtual decrypted field, the conversion script must support field conversion for both, pre-migration (unencrypted) and post-migration (encrypted) nested fields
