Set an email address and change type on the Admin -> Tracker -> Options screen. Make new tickets and change existing tickets and make sure email is sent to the address you entered at the right times.
To test the email, my sandbox was set to send all mail to /var/mail/root, so I just used the 'mail' command and checked the 'Envelope-To' on the emails. Note that the custom email address will get 3 copies of each email - one plain, one multipart, one html.
